Zunka Makes 1 medium bowl

Ingredients

3 tbsp + 1 tsp oil
½ tsp mustard seeds
½ tsp cumin seeds
3 cloves of garlic, chopped
1 tsp red chilli powder
½ cup onion, chopped
½ tsp garam masala
¼ tsp turmeric powder
Salt to taste
½ cup gram flour
1 tsp water (optional)
1 tsp chopped coriander leaves for garnish (optional)

Method

1. In a nonstick pan, add 3 tbsp oil on a low-medium flame

2. Once the oil is hot, add mustard seeds and let them crackle

3. Add cumin seeds and chopped garlic to it

4. Add onions to it and saute it for 2-3 minutes till they turn translucent

5. Now, add red chilli powder, garam masala and turmeric powder and mix well

6. Add salt to taste and mix

7. Add gram flour, little by little, and not all at once. Keep mixing the flour with the onion mixture. Let it roast well and add more only once the flour is well absorbed into the mixture. You can choose to add water if you don’t want the mixture too dry

8. Lastly, add 1 tsp of oil and scrape off all the remaining flour from the pan in case it is stuck to it

9. Turn off the flame and transfer this to a bowl

10. Garnish with coriander if you like. Serve with Indian bread of your choice

Tips

I tried Zunka with a thepla. But it is best eaten with Bhakri.
