Having food restrictions is not always easy while traveling. As a vegetarian, I often find myself lost and helpless on my trips sometimes when I can’t figure out what to eat due to lack of enough vegetarian food options.

Maggi has been an all-time favorite snack for me since childhood. I had a few packs of Maggi noodles with me while I was locked down alone in Madrid. Since I was experimenting with new recipes, I came across an interesting one with Maggi noodles which turned out to be delicious This recipe is a part of my Lockdown Food Diary that I had made when I was quarantining in Madrid in 2020. Back story: I spent 80 days locked down in Madrid in 2020, 60 days of which I tried new recipes every single day and compiled everything into an e-booklet of vegetarian lockdown recipes!
