Spaghetti Aglio e Olio Makes 2 bowls

Ingredients

200 grams of Spaghetti noodles
10-12 chopped basil leaves (parsley is originally used but if you don't have that replace it with basil)
5-6 chopped garlic cloves
1 tsp Chilli flakes
3/4 tsp lemon zest
1 tbsp store-bought Aioli sauce
1 tsp dried parsley
3 tbsp extra virgin olive oil
1 tsp grated cheese of your choice
Salt to taste

Method

1. In a deep vessel, boil water with salt on a medium-high flame

2. Once the water comes to a boil, add uncooked Spaghetti to it and let it cook 80% on a medium flame

3. Meanwhile, in another vessel, heat olive oil

4. Add chopped garlic, Chilli flakes, lemon zest, and let it cook till garlic is slightly golden brown

5. Add Aioli sauce to it along with 1 cup of pasta water that is getting boiled

6. Drain excess water from the pasta and add the Spaghetti to the Aglio e olio sauce

7. Toss it well, add dried parsley and fresh basil on top along with some salt if needed

8. Sprinkle grated cheese on top and serve hot

Tips

The original recipe has fresh parsley instead of fresh basil, so you can choose to replace it. Parmesan cheese works best but since it is not easily available in India, I have used local grated cheese to sprinkle on top of the pasta.
