Indian Quesadillas Makes 1 medium plate

Ingredients

4 theplas / rotis / parathas
1 tbsp oil/ butter
¾ cup chopped bell peppers
1 tsp chili sauce
2 tsp ketchup
1 tbsp garlic mayo / regular mayo
2 tbsp grated cheese / 2 cheese slices
1 tsp oregano
½ tsp pizza seasoning (optional)
Salt to taste

Method

1. In a pan, heat oil

2. Once the oil is hot enough, add bell peppers, chili sauce, ketchup, oregano, pizza seasoning (optional), and salt to taste

3. Saute this on a low flame for 2-3 minutes. Once everything is mixed well, turn off the flame and let this mixture cool down for 5 -10 minutes

4. Meanwhile, take two plates and place two theplas on each plate. Smear some garlic mayonnaise or regular mayonnaise on one side of all the 4 theplas

5. Add the veggie mixture to the center of one thepla. Add a cheese slice on top and cover it with another thepla on top. To lock all the sides of it well so that they don't open, add water around its edges

6. Roast this on the same pan that was used for veggies. Once the cheese starts melting slightly, flip to the other side

7. Take it off the flame and transfer it to a plate. Cut this into 4 pieces. This is one way of making the quesadillas

8. Another way is by using only one thepla. Add the veggie mixture on half it and coat the other half in the shape of a calzone. Add water around the edges with your hands so it doesn't stick. Roast this on both sides

You can use either of the ways to make the remaining two quesadillas.

Serve with ketchup and mayo. Enjoy!
